ATTENZIONE!



Now that you have made the dough, it's time to start making pizza. The two pizza recipes we are sharing with you now are the two original pizza of Naples. Pizza originated in Naples as a peasant food with simple and inexpensive ingredients that every Neapolitan family had readily available. Tomato, salt, basil, olive oil— and if you were really living it up, Fior di Latte cheese.

You will see that these recipes are simple. Simplicity is the heart of Italian cooking... with just a few good ingredients, you can truly eat well. It’s time to get started making your pizza!


UTENSILS NEEDED TO COOK YOUR PIZZA: Baking Sheet

Pizza Cutter


PIZZA COOKING PROCEDURE:

  1. Place your oven on broil at high setting.

  2. Stretch your pizza dough by hand or using a pizza roller until it is 11 inches in diameter. Make sure to have excess flour on your work surface so that the dough does not stick to it.

  3. Sprinkle your baking sheet with a small amount of flour.

  4. Place the stretched pizza dough onto your baking sheet and add toppings.

  5. Gently shake your baking sheet, your pizza should move and not be stuck to the sheet, even after you add your toppings.

  6. Add your toppings to the pizza dough.

  7. Place your pizza in the oven and cook for 5-7 minutes until golden brown. Make sure to pay attention! As they say in Italian, “ATTENZIONE!” Your pizza will burn if not watched. This is a fast cooking method. Neapolitan pizza requires ATTENZIONE!

  8. Once your pizza is golden brown, take it out of the oven and slice with a pizza cutter.

Or, you could be an authentic Italian and eat it with a fork and knife.


MARINARA PIZZA 1 Can Whole Peeled Tomatoes

1 Clove Thinly Sliced Garlic

Salt Oregano Basil Parmesan Cheese

Extra Virgin Olive Oil


  1. Strain whole peeled tomatoes in a bowl and lightly crush them with your hands until they are a grainy, sauce-like consistency.

  2. Place 1 spoon of crushed tomato onto the pizza and evenly spread 1 inch from the edge. Repeat until desired level of sauce is reached.

  3. Add salt, oregano, basil and parmesan cheese to your taste.

  4. Drizzle a little extra virgin olive oil on the top of your pizza.

  5. Cook and MANGIA!


MARGHERITA PIZZA

1 Can Whole Peeled Tomatoes Fresh Mozzarella Cheese (If you don’t have any readily available, shredded will do fine)

1 Bunch Fresh Basil Extra Virgin Olive Oil


  1. Strain whole peeled tomatoes in a bowl and lightly crush them with your hands until they are a grainy, sauce-like consistency.

  2. Place 1 spoon of crushed tomato onto the pizza and evenly spread 1 inch from the edge. Repeat until desired level of sauce is reached.

  3. Cut your mozzarella into slices. Slice into strips, do not dice. Add it to your pizza.

  4. Remove the basil leaves from the stalk. Place around your pizza.

  5. Drizzle a little extra virgin olive oil on the top of your pizza.

  6. Cook and MANGIA!
